Lavallée Cuisine was built on a legacy of love, flavor, and family. Founder and Head Chef Gary first discovered his love for cooking as a child in La Vallée de Jacmel, Haiti, learning side-by-side with his mother in the kitchen. From preparing fresh ingredients to mastering bold, traditional Haitian recipes, she passed down not just techniques—but a deep love for sharing meals with others.

Determined to carry on her dream, Gary turned that early passion into purpose. Today, Lavallée Cuisine is a family-run food truck honoring her memory with every plate—bringing the vibrant flavors of Haiti to the heart of Tampa Bay.

Together with his wife, their beautiful children, and Gracey, the family’s chocolate lab- Gary serves up dishes full of heart, heritage, and home-cooked love.
